ROASTED SALMON SPAGHETTI IN CREAMY POBLANO SAUCE

BARILLA SPAGHETTI PASTA

Bring 4-6 quarts of water to a boil. Add salt to taste. Add pasta to boiling water.

For authentic “al dente” pasta boil for 11 minutes, stirring occasionally. Drain.

 

 

SALMON

1 (5-oz) piece salmon fillet with skin

2 tablespoons unsalted butter

Salt and pepper

INSTRUCTIONS

Rub salmon all over with the butter and season with salt and pepper. Roast, skin side down, on a foil-lined baking sheet in upper third of oven until fish is just cooked through, about 12 minutes. Cut salmon in half crosswise and discard skin.

 

CREAMY POBLANO SAUCE

2 TABLESPOONS UNSALTED BUTTER

½ WHITE ONION

1 GARLIC GLOVE

4-6 POBLANO PEPPERS (chopped and seeded)

SALT

¼ CUP HEAVY CREAM

 

INSTRUCTIONS

Melt butter in skillet over medium heat. Add garlic and onion and sauté until onions brown, about 4-5 minutes. Add the poblano peppers and sauté for 5 more minutes then stir in the cream. Bring to a boil then reduce heat and simmer until the sauce begins to thicken, about 5 minutes. Puree in blender. Add salt. Add the sauce to the pasta. Top with the salmon and serve.

 


SMOKED SALMON PASTA WITH CHIPOTLE CREAM CHEESE

BARILLA ELBOWS PASTA

Bring 4-6 quarts of water to a boil. Add salt to taste. Add pasta to boiling water.

For authentic “al dente” pasta boil for 7minutes, stirring occasionally. Drain.

 

CHIPOTLE CREAM SAUCE

1 tablespoon unsalted butter

¼ white onion chopped

1 small garlic clove finely chopped

1/3 cup milk

4 tablespoons cream cheese

1 teaspoon chipotle

Salt (to taste)

Chopped smoked salmon

Scallions for garnish

  

INSTRUCTIONS

Melt butter in a skillet over medium heat; add the onion and the garlic. Stir in the milk and gradually stir in the cream cheese until the sauce is smooth and even. Add the chipotle and salt to taste. Toss in the smoked salmon and mix with the pasta. Serve and garnish with scallions.
